The next wave of culinary talent has arrived. Bold, grounded, and globally fluent, they took centre stage at Milan’s beautiful Castello Sforzesco on 30 October. Chef Ardy Ferguson emerged as the winner of the S.Pellegrino Young Chef Academy Competition 2024–25, under the mentorship of Chef Vicky Lau from Hong Kong. Drawing from Indonesia’s vibrant flavours and Hong Kong’s refined finesse, his winning dish, Archipelago Celebration, impressed judges with its balance of innovation and authenticity.
