25g sachet medium peri peri spice mix 200g (2 cups) shredded cooked chicken 25Qg pkt microwave 90-second long-grain white rice 1 Lebanese cucumber, halved lengthways, seeded, thinly sliced 1 green capsicum, finely chopped 2 green shallots, thinly sliced 2 tbs fresh lemon juice 1 tbs extra virgin olive oil 1 little gem lettuce, leaves separated 1 Combine the spice mix and chicken in a large microwave-safe bowl. Microwave for 1 minute or until warmed through.
2 Cook the rice following packet directions. Add rice to the chicken mixture with the cucumber, capsicum, shallot, lemon juice and oil. Toss until well combined. Divide among lettuce leaves, to serve.
